This is a simple but indulgent recipe – one for a special occasion. We created it for Diwali for one year. For ease, the
the recipe uses shelled crab meat, but you can start with a whole crab if you prefer: a 1-1.2kg
crab is perfect for two.
75 gm butter
3 large garlic cloves, finely chopped
1 tsp freshly ground black pepper
2 cm piece ginger, finely chopped
1-2 green chilies, finely chopped
4 spring onions, trimmed and roughly chopped
300 gm crab meat
3 dill sprigs, leaves only, roughly chopped
1 tbsp roughly chopped coriander leaves
1 tbsp lime juice Coriander leaves, spring onion, green part only,
thinly sliced, and lemon wedges, to serve
4 soft white buns, halved, toasted and buttered, to serve

1- Heat a frying pan over medium heat. Add butter and garlic and fry until light golden brown (5 minutes).
2 - Add pepper, ginger, chili and spring onions, turn the heat too high and sauté until fragrant (1 minute).
3- Add crab meat with 2 tbsp water and sauté until warmed  through (2-3 minutes). Add remaining ingredients (except
garnishes and bread) and sauté until combined (1 minute).
4- Transfer to a plate, scatter over coriander and spring onion and serve with lemon wedges and buns on the side.
