Apples and Prosciutto in Sweet Potato Pastry

Preparation time: 10 minutes
Cooking time: 45 minutes
Overall time: 55 minutes
Serves: 5 to 6 people

Recipe Ingredients:
·         1 sweet potato pastry
·         6 large eggs
·         1 large Fuji apple, peeled, cored and roughly chopped
·         3-ounce prosciutto, cooked and chopped
·         Pinch nutmeg
·         Salt and pepper to taste

Cooking Instructions:
1.  Start by preheating your oven to 400°F. Coat a 10-inch quiche or pie pan with cooking spray.

2.  Press the potato pastry evenly onto the sides and bottom. Set your Ninja to Bake for about 8 to 10 minutes.

3.  When the time is up, remove and reduce the heat to 350°F.Place the eggs and apple in the 40 oz. Processing Bowl.

4.  Pulse until the apple is evenly chopped. Add the prosciutto, salt, pepper and nutmeg.

5.      Pulse for about 2 to 3 times. Pour into the pastry and bake for about 35 to 45 minutes, until the centre is set.

6.      Cut into wedges and serve while warm. Serve and enjoy!
